1 cup low-fat cottage cheese
2 large eggs
1½ cups oat flour
¼ cup maple syrup
1 tsp vanilla extract
1½ tsp baking powder
¼ tsp baking soda
½ cup semi-sweet or dark chocolate chips
Pinch of salt (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin or grease with oil spray.
- In a blender or mixing bowl, combine cottage cheese, eggs, maple syrup, and vanilla. Blend until smooth.
- In a separate bowl, whisk together oat flour, baking powder, baking soda, and salt.
- Add dry ingredients to wet and mix until just combined—don’t overmix.
- Fold in the chocolate chips.
- Divide batter evenly into muffin tin (¾ full).
- Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack
