Ingredients
2 ripe bananas (mashed)
2 eggs (or flax eggs)
1/2 cup Greek yogurt
1 scoop protein powder (25g)
1 cup oat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1 tsp vanilla extract
1–2 tbsp maple syrup (optional)
Instructions
Preheat oven to 350°F. Line muffin tin.
Mash bananas and mix with wet ingredients.
In another bowl, whisk dry ingredients.
Combine wet and dry, stir gently.
Fill muffin cups 3/4 full.
Bake 18–22 min. Cool before storing.
